Traditional Dutch Speculaas (Speculoos) Cookies

The mainstay of traditional Dutch cookies, Speculaas (also known as Speculoos) cookies are a staple of the Christmas season in the Netherlands, Belgium, and parts of Germany. These crispy, spiced cookies come in a variety of shapes and are flavoured with ginger and cardamom for a delightfully festive treat.

Their signature images are traditionally stamped or moulded into each cookie before baking to give Speculaas a unique character. Serve them with coffee, tea, or a glass of brandy for a special treat on a cold winter’s day.

Ingredients:

  • Wheat flour
  • Sugar
  • Vegetable oil (palm, rapeseed)
  • Speculoos spices (cinnamon, nutmeg, clove, allspice, ginger, coriander, mace, cardamom)
  • Raising agent (sodium bicarbonate, disodium pyrophosphate)
  • Sodium
  • Invert sugar syrup
